I had a couple G3's laying around, and for some reason I had a 15" LCD monitor. As I was cleaning up my workshop, these to things were sitting beside each other, the LCD looked to be about the same size.
So I started taking shit apart. Dropped about 100 pounds of CRT monitor out of the iMac, and in went the LCD, fit just perfect:

Since that fit in nicely, it was an easy decision to slap a Dreamcast inside The hard part was figuring out whre to place it. I didn't want to cut a big hole in the side of the case (although I was debating on turning the handle on the back of the case to an access port for the disks), but, I ended up doing a 'PS1 upside down mod' - its not great, but it works pretty good:

Then I had to extend the controller ports:

Then later I had to extend them a little longer:

then I started adding some functionality:

A lot of work went into this, like getting the original power button to work for the new monitor and adding a power switch for the DC, then adding a sound amp to power the iMac's speakers...getting it all together was a bitch.
it was all pretty fun to do, and it plays just great!

be mindful of the the Mac you choose:
the one I used had a CD tray, the other one is a slot load (where I placed the controller ports
it also has a removable bottom, the other has a small access port
also, where I load the games, it has a larger opening.

I'd like that.. I'm quite familiar with Apple machines of that era. My choice would probably be one of the earlier iMacs (as you've used) because they're so bloody cheap (and AIO).
The only other machine I could see this making sense with would be an eMac, but they're still somewhat useful yet.
